I finally found something to use my tofu in ......chocolate tofu mousse....I PROMISE that you can't taste the tofu, and it is delish and not too unhealthy!

Flashback........

Yesterday was out 8 month wedding anniversary.....sounds cheesy, but Patrick's mom calls us on every 1 month anniversary to remind us.....otherwise we'd probably forget. We celebrated with dinner at Doc Chey's and a trip to Target..haha!!! I thought I would post these random pics that I had saved from our wedding slideshow in honor of our years together.....
This was right before Kelly and Eric Moody's wedding.....we were both carrying a few more pounds that we are now......but we had a wonderful evening and danced the night away! I'm thinking this was August 04?

Our first trip to Stone Mountain together......I think this was March of 05? This was actually the day we went to look at engagement rings..I do remember that!!!!!!!!!

Saturday Morning Pancakes!

I posted the recipe below from this cookbook...I highly recommend it!
We got this new griddle from Patrick's grandparents for Christmas and we've already used it twice! It is awesome!!! This morning I made cottage cheese pancakes...I know it sounds weird, but they're really yummy and I can eat a lot for a low amount of calories- two things that I always look for in food! Trust me, they're really good, and Patrick agrees!

For you health-junkies like me ....here's the recipe:


1/2 cup cottage cheese (I use fat free, but I am sure any will work)

2TBSP egg beaters


Blend in a large bowl w/ a mixer till smooth

then add:


1/4 cup flour

1/3 cup milk


Again, blend until smooth.

In a separate bowl, beat 3 egg whites with an electric mixer till fluffy and they start to form soft peaks. Fold into the flour mixture. Let set 5 minutes.


Drop onto hot griddle, I usually make them 1/4 cup each..they do not spread out much. Flip after about 2 minutes...Cook till brown on both sides.


For the WHOLE recipe: approx 300 calories, 1 gram of fat, 36 grams of protein, 0 grams fiber. Serves one to three people depending how hungry you are!!

I got new shoes! YAY! In honor of my new shoes, I ran 2.5 miles tonight on the treadmill! I need to find a road race to train for so that I will continue running! And yes I have big feet!

Farmer's Market!

One sad thing about no longer being in Atlanta every weekend is that we can no longer go to the Dekalb Farmer's Market-the best grocery store in the entire world.........with the most incredible prices on produce and craziest selection of international foods. Here are just a few pics of our tasty purchases.....yummy clementines, strawberries, and BLACKBERRIES!!!!!!

This huge pineapple was so cheap, literally half the price of Publix......... And we got roasted red peppers!!!!!!!!
We also got ingredients to make our own basil rolls....I can't wait to make them sometime this week!!!
We had to stop by Athens Pizza House for lunch....it is the best pizza in the world!!!! If you are ever in Decatur, you MUST try it!!! These are Patrick's leftovers for this weekend while I'm working...if they last that long!!!!!






We also made a quick stop to borrow a cooler and visit with Victor Dog for a bit...He's a cutie, but not really into posing as evidenced by these pictures!!!!!

Christmas pics...a little late....

Our First Christmas as a married couple! I celebrated it by working 90+ hours a week......but we managed to sneak a little Christmas celebration in..........
